Buttercream Breakthrough!
I make shitty buttercream icing. Always have. It always breaks, and I never know if it is due to butter temperature, or overmixing or undermixing … so I tend to make cream cheese icing all the time. Saves me the hassle and oh so delicious. But last night I made two—TWO!—seemingly perfect buttercreams. Nice texture, nice flavour, all good.
